Drumstick leaves have all the vitamins and proteins needed by us. It has multiple health benefits like reducing blood sugar levels, regulate blood pressure, reduces heat in the body and good for arthritis.
Here is a tasty and healthy recipe:
Ingredients:
1. 200gms drumstick leaves (tender)
2. 100gms Moong Dal (Green Gram)
3. 1 medium sized onion (Chopped)
4. 3-4 green chilies (chopped)
5. 2-3 red chilies
6. 1 tsp sesame seeds
7. 1 tsp Dhania (coriander powder)
8. 1/2 tsp Jeera
9. 1/2 tsp Mustard seeds
10. 8-10 curry leaves
11. 1 tsp Coconut powder
12. 1/8 tsp turmeric
13. Salt – to taste
14. 1 tsp – Oil
5. Garlic – 2-3 cloves(chopped)
Method:
- Dry fry red chilies, sesame seeds, coconut powder, jeera each separately.
- Make a course powder and keep it separate
- Boil drumstick leaves with water and turmeric
- Drain the water without mashing the leaves
- Cook moong dal till it is soft and do not mash it.
- Mix leaves and dal gently and keep aside.
- Heat oil, add mustard seeds, curry leaves, chopped garlic. Fry till the seeds splutter.
- Add onion, green chilis and fry it for 1 – 2 mins till the colour changes.
- Add dal and boiled leaves.
- Add salt to taste and cover the lid. Cook for 2 mons.
- Remove the lid and sprinkle the masala.
- Mix well and it’s ready to serve.
